Breakfast Egg Box

To prepare a breakfast to eat at work, this one is super nutritious:

- 2 grass fed boiled eggs
- 1 slice of sourdough bread with grass fed butter
- 1 hand full of mixed leaves (lettuce, rocket, watercress, basil etc)
- 1 small carrot chopped
- Cherry tomatoes
- Cucumber sliced
- Sprinkle of nuts and/or seeds of your choice
- A good glug of extra virgin olive oil
- Season with salt and pepper
- A knife and a fork!


Prior to the day, hard boil the eggs and put them in the fridge, ready to go.
In the morning, put all the fresh ingredients into your breakfast box (e.g Tupperware). Add the peeled, sliced hardboiled eggs on top. Then sprinkle nuts and seeds over the top. Finally add the olive oil, salt and pepper. Close it up. Put the bread in a paper bag together with your breakfast box and enjoy a nutritious breakfast when you get to work.

Why it’s good for us
- Eggs, as well as being high in protein, contain choline, which is good for brain function.
- Sourdough bread is make traditionally without yeast, which is a common irritant to our digestive system.
- The mixed leaves, or any green vegetable for that matter, are high in most vitamins and minerals, and help our body to be more alkaline.
